4.4.3 Hot Honeyed Carrots

3 | | bunches Dutch carrots | heads trimmed and peeled |
60 | g | butter |
0.75 | cup | Vegetables stock |
1 | tbsp | thyme |
1 | tbsp | sage |

Instructions
- Melt butter and honey in a large deep frying pan.
- Add carrots and toss to coat in mixture.
- Pour over the stock and the herbs.
- Cover and simmer for for 5 min or until just tender.
- Remove cover, bring to the boil and cook for about 8 min until
liquid has evaporated and carrots are golden and caramelised,
turning occasionally.
