4.3.4 Cheesy Smashed Baked Potatoes

Ingredients

1 | kg | | potatoes | washed |
40 | g | | butter |
250 | ml | (1 cup) | milk |
1 | tbsp | | flour |
120 | g | (1 cup) | cheddar | coarsely grated |
2 | tsp | | Dijon mustard |
1/2 | tsp | | smoked paprika |
2 | tbsp | | chives | finely chopped |

Instructions
- Place potatoes on a baking try and drizzle with olive oil. Season
with salt and pepper.
- Roast for 30 min.
- In the meantime melt butter in saucepan over medium heat.
- Add flour and cook stirring for 1 min, then remove from heat.
- Add milk and whisk until well combined. Cook stirring until sauce
boils. Remove from heat.
- Add half the cheddar while stirring.
- Add mustard, paprika, and chives and season with salt and pepper.
- Cut a small cross in the top of each potato. Gently press on the
top of the potato to slightly open up.
- Spoon the sauce into the cuts and sprinkle with the remaining
cheddar.
- Bake until golden brown. (around 5 min)
