6.3.5 Mousse au chocolate

Ingredients
Amount | Ingredient | Preparation |
100 | g | baking chocolate | melted |
2 | | egg | separated |
3 | tbsp | sugar |
200 | ml | cream | whipped |

Instructions
- Mix egg yolks with 2 tbsp of sugar until it becomes bright.
- Add melted chocolate and mix well.
- Add 1 ∕ 3 of the whipped cream and mix.
- Carefully mix in the remaining whipped cream using a silicone
scraper.
- Stiffen egg whites with a pinch of salt in separate bowl. Careful
that everything touching the egg whites is cleaned and free of
cream.
- Add 1 tbsp sugar to the egg whites and continue mixing.
- Carefully mix in the egg whites in the chocolate mixture using the
silicone scraper.
