4.2.1 Sourdough bread

Oven Temperature: 230°
Time in oven/on stove: 60 min
Resting time: 8 h
Time to actively work on it: 1 h

Ingredients

150g sour dough starter
300g water
400g flour
10 g salt

Instructions

  1. Mix wet ingredients with sourdough starter.
  2. Add in flour and salt.
  3. Let rest for 30 min covered with wet towel.
  4. Form ball.
  5. Let rest for 5 h to 12 h until it doubled in size.
  6. Optional: Stretch and fold the dough every hour during the above resting period.
  7. Shape the bread.
  8. Let rest for 30 min in a dutch oven lined with baking paper.
  9. Cut the top and put in preheated oven.
  10. Bake for 20 min with lid on.
  11. Remove lid and bake for a further 30 min.
  12. Take bread out of the dutch oven and bake for another 10 min.
