6.2.3 Chocolate and pear cake

4 buerre bosc pears halved and centres removed
2 cup water
125g sugar
1 tsp cinnamon power (or 1 stick)
75 g butter
200g dark chocolate
150ml water (take syrup from poached pears)
125g sugar
200g flour
2 tbsp cocoa
1 tbsp baking powder
2 eggs
1 tsp vanilla essence

Instructions

  1. Poached Pears
  2. Bring water with sugar and cinnamon to boil.
  3. Add pears and boil for 2 min.
  4. Take from heat and set aside.
  5. Cake
  6. In a medium saucepan, melt butter and chocolate together with the water.
  7. Remove from heat and stir in sugar.
  8. In a large mixing bowl, sift flour, cocoa and baking powder.
  9. Whisk in melted chocolate mixture.
  10. Add eggs and vanilla essence, then whisk until smooth.
  11. Pour batter into buttered tin.
  12. Arrange pear pieces on top.
  13. Bake for 50-55 minutes or until a skewer inserted into the centre comes out clean.

Notes:
Instead of poaching pears you can use tinned pears and add a total of 250 g sugar instead.
