5.2.7 Cilantro-Lime Soy Sacue

Serves: approx 1 cup

1 garlic clove
1 tsp chilli
1 cm ginger peeled and thinly sliced
2 tbsp fresh cilantro finely chopped
0.25cup soy sauce
2 tbsp fresh lime juice with pulp
3 tbsp water
2 tbsp sugar

Instructions

  1. Place garlic, chillis, and ginger in a mortar and pound into a paste.
  2. Transfer paste into a glass jar with a tight-fitting lid and add remaining ingredients.
  3. Mix well until sugar is dissolved.

Notes:
To serve, pour into small ramekins.
Sauce may be stored in the refrigerator up to 2 weeks.
