1.1.1 Puffy Omelet

Ingredients

1.5 | tbsp | water | |
3 | tbsp | butter | |

Instructions
- Separate eggs.
- Combine yolks and water. Season with salt and pepper.
- In a separate bowl beat egg whites until stiff but not dry.
- Carefully fold egg whites into yolk mixture.
- Heat butter in a frying pan.
- Pour mixture into pan and leave until set and golden on the
bottom.
- Place the omlette under the hot grill until set.
- Garnish with parsley.
Notes:
The omelet can be topped with various toppings:
- Heat cut spring onion, halved cherry tomatoes with some olive oil
on medium heat just until slightly soft.
- Grated cheese.
